Doritos White Horseradish Cheddar Mac and Cheese. . .um, yes please!

Doritos. White cheddar. Horseradish. Macaroni and cheese. . . TALK DIRTY TO ME!

I recently came across a post where I saw someone dipping BBQ chips into their mac and cheese. . . it got me thinking. When I make mac and cheese I usually put some bread crumbs on top and broil it for a few minutes to give the mac that crispy delectable topping. But, I didn’t want to use BBQ. NACHO CHEESE DORITOS>BBQ. Can’t go wrong with Doritos, right? So I decided to crunch up these tasty treats and top my mac with them. I make a pound of macaroni at a time, and I think I had this 5 days in a row. #sorryimnotsorry #extracardio

(Also- stay tuned for an upcoming food post on “Mac and Cheese Grilled Cheese with Bacon and Tomato Jam”. yep. I said it. I made grilled mac and cheese sandwiches with these left overs. Eat your heart out, cheese heads.

This recipe was simple and done in about 30 minutes. (Cavatappi noodles request per the boytoy.)

If you like spicy- I recommend throwing in a bit more than 4 Tbsp of prepared horseradish. (I went easy on it because Aaron was throwing a fit about me putting horseradish in the cheese sauce. He ended up liking it though!) {yay!}

Also- if you plan on having a lot left over, you can also save the crunched up Doritos and sprinkle on after you warm up the left overs.  They get a little soft after you refrigerate them on top of the mac and cheese. Personally, this didn’t bother me- but just a heads up for y’all!

Doritos White Cheddar Horseradish Mac and Cheese
Yields 1
Crunchy nacho cheese Doritos on top, and tangy. creamy, white cheddar horseradish with Cavatappi noodles. Can you say "flavor bomb"?

Ingredients
  1. 1 lb (1 box) Cavatappi noodles
  2. 5 Tbsp butter
  3. 6 Tbsp flour
  4. 2 1/2 c milk
  5. 4 Tbsp prepared horseradish ( You can add more if you like spicier!)
  6. 2 c freshly shredded white Cheddar cheese
  7. 2 c freshly shredded white Monterey Jack cheese
  8. 4 oz. cream cheese (1/2 block)
  9. 2 c crushed Nacho Cheese Doritos
  10. Salt and Pepper to taste.
Instructions
  1. Cook pasta according to instructions on box.
  2. In a sauce pan melt butter, and continually whisk in the flour until a nice thick roux forms. This should be on medium heat. Don't boil it or burn it.
  3. Whisk in the milk.
  4. Whisk in the prepared horseradish.
  5. Turn down the heat to low.
  6. Slowly add in the cheeses, starting with the cream cheese.
  7. Add shredded cheeses once the cream cheese is incorporated.
  8. Whisk continually until everything is blended and melted.
  9. Add salt and pepper to taste.
  10. In a greased cast iron skillet (or baking dish of your choice).
  11. Mix together cheese sauce and noodles.
  12. Top with crunched up Doritos.
  13. Optional: Broil with cheese or bread crumbs on top, sans Doritos, or broil with Doritos on top.
Notes
  1. KEEP AN EYE on the Doritos if you add them and decide to crisp them up in the broiler. THEY WILL TURN BROWN QUICKLY! Mine toasted literally in under 2 minutes and I had to pull the pan out. (That's ok because I like cripsy- but toast to your liking!)
  2. Enjoy with a bourbon. Boom.

    Oh my goodness. That looks so good! I’ve been trying to get my hands on some Cavatappi pasta, but they never have it in any of my grocery stores. Bummer. I’m writing my grocery list for the upcoming week, and I’m adding this to the menu. Hopefully I’ll remember to come back and update you on my results!

      Yes let me know how it turns out! I just got the cavatappi at Meijer but you could use another noodle if you can’t find it! Hey, you could always order on Amazon! lol they have everything, and quick shipping! Good luck, can’t wait to hear about it:)
