An easy, flavorful option for meal prep- Jerk Chicken and Mango

It’s that time of year again. Time to work on your bikini bod- hit the gym hard, and stop eating entire pizzas (but maybe that’s just me). I’ll be real with y’all and say that since October (when I started a new career) I’ve definitely gained a few pounds of squish. I drive a ton for work- some day’s I’m in the car for as many as 10 hours, and it’s hard for me to always eat healthy on the go. So, I’ve vowed to get back on the grind and make healthier meals again.

I usually cook some chicken breasts on Sunday or Monday and keep them in the fridge so I can use them for lunch and snacks for the week- for salads, tacos, wraps, with rice, etc. However, we’ve been buying rotisserie chickens lately because they’re already seasoned and I’m lazy. Shred it once and you can use it for all those same things.

So, here it is-A FLAVORFUL twist on meal prep. I personally can’t stand to have the same boring plain chicken, broccoli and white rice three meals a day, 7 days a week. (Sorry all you people who post your proud meal prep pics.) I think it’s great that you are prepping and trying to get healthy- but it’s literally so BORING to me. Now this recipe- this I can have a few times a week!

This particular recipe is so CRAZY easy!  I like to store extra in the fridge because it’s great warmed up and it’s my new FAVE post-workout snack. (However I still ask Aaron to make it for me every time because he’s a better cook than me, and who doesn’t like to be babied from time to time?)(I’m eating homemade Mongolian beef as I type this- sorry ladies, he’s taken!)

Serves 4
Easy and flavorful, this is a great healthy option for meal prep.

Ingredients
  1. 1 lb shredded (cooked) chicken
  2. 1 large mango, peeled and cubed
  3. 2 tbsp Teriyaki
  4. Caribbean Jerk Seasoning (to taste)
  5. 1 tbsp coconut oil
  6. 1/2 pineapple chunks (optional)
Instructions
  1. Brown chicken in oil.
  2. Add seasoning and teriyaki.
  3. Remove from heat.
  4. Brown mangos (and pineapple if desired), adding a little more teryaki and seasoning.
  5. Reintroduce chicken and mix.
  6. Serve over grain of your choice.
Notes
  1. SOOOO easy, right? Flavorful and healthy!
