Bananas. Peanut butter. Bread pudding. Baileys. Nuff said.
If loving you is wrong, I don’t wanna be right.
Really, I don’t have anything else to say ’bout this besides: SWOON. I’m a huge fan of bread pudding and if I’m gonna be honest, anything peanut butter. But, if you follow my blog at all you’ll already have an idea of my unhealthy relationship with peanut butter.
I made this last weekend for my Grandma’s birthday. I asked if she wanted me to bake her a sweet birthday treat, and she requested my banana bread pudding. This time I added some Bailey’s and made a peanut butter Bailey’s sauce with some crushed peanuts on top. This recipe is actually based off of her “Scalloped Pineapple” recipe (link to post) which is basically a pineapple bread pudding (also incredibly easy) that she traditionally serves as a side dish- and to this day I make it for every holiday-bringing a little taste of Grandma’s to the dinner table.
I’ll make this post shot and sweet (har har) because I know we’re all busy drooling over the red carpet fashion.
- -3/4 loaf of bread, cubed (I just tear it with my hands, and older bread is ok- stale bread works great!)
- -2 sticks of unsalted butter, melted
- -3 eggs, beaten
- 2 cups white sugar
- 2 large (or 3 small) browned bananas
- 1 Tbsp Lockerbean's vanilla extract
- 2 Tbsp Bailey's Irish Liqueur
- 4 Tbsp Bailey's Irish Liqueur
- 2 Tbsp Almond Milk (or any milk of your choice)
- 1 Tbsp powdered sugar
- 2 Tbsp peanut butter
- 1 tbsp crushed peanuts
- Toss all in large mixing bowl and mix with hands until well incorporated. (Your bread should be completely saturated and feel like mush! haha!)
- Place into ungreased baking dish(es)- time will vary depending on which dish you use (see notes). This time I used several small disposal dishes so I could leave one with grandma and others with my customers.
- In a sauce pan on low to medium heat, add Bailey's and heat.
- Add in peanut butter, whisking to incorporate.
- Once well incorporated, mix in almond milk and powder sugar.
- Let cool slightly and drizzle over your bread pudding, or your boyfriend.
- Top with sprinkling of crushed peanuts.
- If I use a larger dish (8x8 or bigger) I usually bake it for 45-50 minutes at 350. Smaller dishes I check periodically- I baked these for 40 minutes so they wouldn't dry out. I usually consider done with the tops of the bread start to just brown and crisp up.
- I like to scoop my bread pudding out with an ice cream scoop for two reasons- 1. it looks nice 2. portion control!
But seriously, bread pudding is one of my go- to desserts because it is SOOO freaking easy. What are your fave easy desserts?
This sounds AMAZING!! I love bread pudding but I haven’t had any in years. Add banana and peanut butter, whaaaat?? I might need to try this recipe! 🙂
