    Bacon Wrapped Nectarines with Balsamic Reduction

    Dear Bacon,

    I’m so sorry I haven’t been buying you lately and have only used you in one dish in the past few months. This whole health kick has been as hard for me as it has for you, and I think we should really start seeing each other again. Let’s start out slow. How about some bacon wrapped fruit- that’s kinda healthy. . .right?

    baconnectarine 1 cookedI decided to make these because I had a large portion of unused bacon in the deli drawer, left over from the PB&J Bacon Cheesecake I made last week. I wanted a little salty snack before work and these were perfect. Simple and best right out of the oven.

    Ingredients:

    • 1 ripe nectarine, cut into 8 slices (you could also substitute a peach, but then you’d have to go through the trouble of peeling it, and I’m all about ease.)
    • 4 slices of bacon, cut into halves (1/2 slice for each slice of nectarine)
    • sprinkle of sea salt
    • sprinkle of brown sugar
    • Pre-made balsamic reduction

    Seriously these are so easy, you’ll die.

    1. Pre-heat oven to 400.
    2. Sprinkle each slice of nectarine with an eensy-pinch of sea salt, and a dash of brown sugar.
    3. wrap bacon around the nectarine.
    4. Sprinkle with brown sugar again.
    5. Cook until bacon starts to become crispy (about 10 minutes- depending on your oven this might take longer. Remember- the slices are not laid out on the baking pan evenly and it will take a bit longer to cook wrapped around something)
    6.  Broil for 3 minutes to give that extra crisp.
    7. Let cool about 10 minutes and drizzle with balsamic reduction.
    8. Enjoy!
