    Welcome to week 3 of my mini series- party dips! Like my last dip, I also got the idea from this book:

    Delicious Dips Cookbook

    Per my usual cooking methods, I typically just peruse through a cookbook to get ingredient combination ideas. So- I think the ingredients are similar, if not the same- but I’m not sure about the quantities being the same. (They most likely are, but I just wanted  to disclose that and not necessarily try to pass this off as my own idea!) I made this dip for Aaron’s birthday last month when we had a small get together. I had left over pistachios from a dessert I made- Pistachio Mousse- Link for that below, just in case you have a mad love for pistachios like I do.

    Fluffy and Light Pistachio Mousse with Honeyed Coconut CrunchOk- back to the dip of the day. Anyway- I love goats cheese, and  I love pistachios so this was a sure fire winner. I’m a dips and sauces type gal, so I could literally eat a entire meal of dips/appetizers.

    So go on- dip up y’all! (“Dip up” is a saying my friend Lauren- and her Grandma Dixie say, meaning “Suppers up come and get it!” Southern and adorable and I’ve adopted it.)

    Pistachio Goats Cheese Dip
    This dip is great for any party; a sweet, salty and tangy snack!

    Ingredients
    1. 3 cloves fresh garlic
    2. 1 Tbsp honey, plus more for garnish
    3. 3 Tbsp unsalted butter, room temperature
    4. 10 oz Goat's cheese
    5. 1/3 c shelled pistachios, plus 1 Tbsp for garnish
    6. 6 chives, 4 for dip, 2 for garnish
    7. pepper to taste
    Instructions
    1. In a food processor, blend garlic, chives and pistachios.
    2. Add honey, goats cheese and butter.
    3. Blend well.
    4. Garnish with chopped pistachios, drizzle of honey and green onion.
    Notes
    1. Serve with butter toasted baguettes.
