    Mac and Cheese Grilled Cheese. Left overs done right!

    Omg. You Guys. As I sit here writing this post, I’m salivating. Too much booze last night and the fact that I haven’t had breakfast yet are leading to an all-too real food fantasy. Just thinking about these sandwiches is making my tumtum rumble.

    Mac and Cheese Grilled Cheese. Be still my beating heart.

    Has anyone ever heard Willa Ford’s song, “I wanna be bad”? Yea, remember that song? (2001 wow- taking me way back) That’s the sound track to eating these sandwiches. “I wanna be bad witchu babay. . .!” (If you know me, imagine me singing this to a sandwich because I totally would. If you don’t know me, I’m just kind of weird and that’s all I got for you.)

     

    Anywho. . . .these pups were a suggestion from my best friend. I had made the mac and cheese in the photo below (White Cheddar Horseradish Mac and Cheese with Crunchy Dorito Topping)- and was telling her how I was going to have left overs for dinner. She said- “Why don’t you make mac and cheese grilled cheese?” Darling, you’re a genius. I’ve had a mac and cheese grilled cheese once, at Shoefly Public house here in Indy but it had been about a year, and the thought didn’t even cross my mind. After this, mac and cheese grilled cheese will be made EVERYTIME I have left over mac. Thanks Bibsa!

    So- I typically include a “recipe card” for my recipes. Today, I’m not going to do that because these sandwiches are so simple and this is more of an “inspirational food post”! Here’s what you’ll need:

    -Bread  (I used sourdough from the bakery, already sliced because I’m lazy.) I don’t recommend using regular sandwich bread (because that’s boring)- get something amazing- even Texas toast will do!

    Butter- enough to slather on your bread slices

    -Left over mac and cheese of any type. But, if you’re feelin’ adventurous, try one of the recipes above.

    Crispy bacon (Because. . .bacon.)

    Tomato Jam. (this is one of my FAVORITE sandwich toppers-sweet and tangy!)

    What? Tomato Jam?!?! How do you make this?!? Calm your tits. It’s supa easy. Here’s how:

    In a skillet- melt a tablespoon of butter  (with just a little coconut oil) and drop your maters in. Skin on is fine. Let them cook over low-medium heat for a good long while. Maybe 25 minutes or until all the skins have burst and you got lots of juices flowin’. Add about a tablespoon of sugar, and a splash of apple cider vinegar. Add salt and pepper. Stir and cook on low until the mixture gets thick- like jam. You can also can this!

    Slop it all togetha and pop that sucker on the Panini maker. or your George Foreman. (I used a George Foreman and to be honest, I only use it to make grilled sandwiches.) OR if you don’t have either of those things- use a skillet. um, duh.

    I hope this post inspires you to do something different with your left over mac and cheese- also this is something the hubs and kids will love!  Easy, DELICIOUS and a good way to get the fam to eat the “same” meal two nights in a row.
