Yawning as I write this today, b/c two cocktails I feel great and one I just feel sleepy. . . and well I just only sampled this one as I as cleaning up the kitchen after I took these pics, but DAMN it was good. I’ve always been a fan of the flavor combination of mint/vanilla and pineapple/vanilla. When I visited Circle City Kombucha’s manufacturing facility earlier this week and they let me choose which flavor i wanted to share with you guys, I automatically went for the Pineapple mint and I already had something in mind!
Back in my bartending days, we had a pineapple spiced-rum mojito on the menu and it had vanilla extract in it. This cocktail that I made today is extremely similar and brings back memories from behind the bar, and maybe sneaking a few sips of said cocktail here and there. . .MOVING ON. . .
I usually purchase Kombucha at the grocery store in the cold-pressed juice section. I knew it was “good for you” and contains probiotics and that it was a fermented beverage, but to be honest that was the extent of my knowledge.

What is Kombucha?
- Kombucha is a fermented tea.
- It is made via a similar process to beer or wine. Pineapple mint is one of the new flavors over at Circle City Kombucha, so if you’re local, be sure to grab a growler full!
